Desarrollo de la discriminación a los sabores

Resumen


Los estilos de vida actuales se caracterizan por poca actividad física y mala alimentación crónica la cual programa, el síndrome metabólico y sus consecuencias a largo plazo (hipertensión, diabetes y enfermedades neurodegenerativas). La tendencia actual para su tratamiento involucra entre otros el conocimiento cada vez más amplio sobre la fisiología de los sistemas sensoriales implicados y los hábitos alimentarios. En este trabajo se abordan aspectos generales de la participación del sistema gustativo, la percepción gustativa temprana y cómo influyen sobre las conductas alimentarias y sus repercusiones sobre el estilo de vida en la salud del ser humano.

Abstract

The current life-styles program the metabolic syndrome, and a number of diseases such as high blow pressure, diabetes, dyslipidemia or neurodegenerative disorders; the recent trend for treatment involves knowledge about the underlying sensory systems, habits and genetic patterns among others. The present paper discusses the general aspects of the gustatory system, and the fetal uterine experience, subserving taste perception and how they may affect later in life eating behavior and their long-term consequences upon human health.
